Dinner made yesterday night at home:
Boneless pork medallions served on smashed potatoes and a bed of spinach and grape tomatoes with a light balsamic vinegar dressing.
Hmm? What can I say about this, other than the fact that my girlfriend first made this for her family a couple weekends ago after finding a recipe in a grocery store flyer! So delicious that I thought I should try my hand at it. I managed to cook all in about 1/2 hour and it was super easy. The only big effort required was smashing the potatoes, which wasn’t much to begin with 😄
